I have seen a ton of my activity being sent over, URLs and file info for downloads being sent for smartscreen, and other items I never really dug into. I get the smartscreen stuff, but do think a bit too much data is sent. As for the activity tracking, yes it does that a tremendous amount if 'Activity history' is enabled.
Disable it and it goes away. Disclaimer: I have never personally inspected the data sent to Microsoft. I think the issue is that the default levels of data collection have a very huge umbrella which can potentially and unintentionally collect highly sensitive data, which is prone to misuse.

About the other stuff, yes, you can disable it, there are tools some are included in this article which do that and some other stuff, but Windows has a habit of reverting some or all of those things with updates and what not, and it becomes a pain quickly. About the GPS part, you are right that MitM attacks aren't really feasible, but MS and other alphabet agencies would have access to your full geolocation data as long as it is being sent to their servers Just like Lawrence said, data is the currency in today's economy.

When you do ask about things described in the documentation, you are just showing that you really don't care, and all you want to do is express your opinion. I actually read your points, only they had no basis. TheDcoder, Just check any "tech news site". How many posts about Windows Telemetry exists, and how many there are about Android Telemetry. The "witch hunt" I said, was not meaning a "conspiracy theory", but it's about targeting. About reactivating stuff: that sucks. About GPS, Windows won't track you if you disable it.
Google used other methods other than GPS to track you in the past. Here sits the difference between profit from services VS profit from big data. Everything is tracking us indeed. There's no such thing as "real privacy" today, but it is tiring to see so much focus on Windows 10, and the heap of baseless claims that many sites and users spread across the internet not talking about BC , while they themselves ignore the services they use most and collect the most data.

But there is a certain distinct difference between Windows and all the other OSes that you mentioned. Windows is a "non-OEM controlled" OS, meaning it is something the user chooses to run on their device, rather than the manufacturer of the device forcing one onto the user.
Android is kind of a special exception, it is a FOSS OS, but due to the design of mobile phones, there is a limited choice among the user on what they can run. Worst-case scenario their OEM locks the entire bootloader and ships their own fork of Android with home bunch of their own malware and what-not.
On top of that, Windows is the world's most used desktop OS, so it is bound to get the most attention. In the end, I do see your point, but I am not sure if I'd call it a "witch hunt".
To me it looks justified. Users who use macOS, Android, ChromeOS explicitly opted to use a device which has the spyware embedded into their OS, not something a person who is concerned about their privacy would do. In any case, we need to keep voicing the privacy violations being done by these big corporates so that they can make unimaginable amounts of money.
As a consumer, we can choose who we support. That is why I use Linux and don't buy any device which restricts my freedom or privacy.
